About us

About us: Argentine grill on Plaza de Cascorro

A family story between Italy, Argentina and Madrid, told at the table.

Our story

9 years on Plaza de Cascorro, La Latina

We have been on Plaza de Cascorro for 9 years. Mamúa began as a specialty coffee and brunch spot, because the premises had no smoke extraction. In 2026 we took the step that was missing and became an Argentine grill, with the same name in the same neighbourhood.

Mamúa is run by the Migliore family, who have Italian roots. Our cooking follows their journey:

  1. ItalyFamily recipes and customs.
  2. ArgentinaThere they change around the table.
  3. MadridAnd they arrive in La Latina.

The milanesa napolitana tells this story best: a meeting of cultures that became part of Argentine food, and that we now serve at our table.

What our name means

Mamúa. In lunfardo, Buenos Aires slang: Drunkenness

We chose this name for its Argentine roots. Lunfardo is tied to immigration and cultural mixing, just like our family. Wine, conversation and lingering at the table do the rest.

What we are

What makes Mamúa

The family story

The journey between Italy, Argentina and Madrid shows up in our dishes and in the customs around food.

The grill and the craft

Asado, meat and kitchen work are at the centre of what we do.

The table and the sobremesa

Sharing plates, toasting and talking. That is why we want the tables to roar again.

The neighbourhood

Cascorro, El Rastro and our terrace are part of coming to Mamúa.

The house

Who is behind Mamúa

We are Iván and Pablo Migliore, Argentine brothers who have lived in Madrid for more than two decades. Iván discovered asado while working as a cocktail maker for an Argentine caterer, when he had to take charge of the grill.

Around fifteen years ago he started Catering El Ombú, and Pablo joined as demand grew. At Mamúa, Iván began in the kitchen and Pablo on the floor.

“What I offer most is being a good host.”
